Ingredients:

1 1/4 cup oil

2 3/4 cup applesauce

3 1/2 cup nonfat milk

4 1 1/4 cup sugar

5 6 egg whites

6 2 cups flour

7 21. baking soda

8 2 1/2 t. cinnamon

9 1/2 t. nutmeg,

10 1/2 t. cloves

11 2 c. grated carrot,

12 1/2 c. raisins

13 1/2 c. chopped walnuts

14 1 -8oz can pineapple w/ juice

15 1 1/2 t. vanilla

Frosting

1 1 cup low-fat cottage cheese

2 1 T. low-fat yogurt

3 1 - 8 oz. pkg light cream cheese

4 1 c. powdered sugar

5 1 1/2 t. vanilla

Instructions:

1 Preheat oven to 350 degrees. Grease 9 X13" baking pan with cooking spray. In one bowl beat together applesauce, milk, sugar, and egg whites. In another bowl sift together flour, baking soda, cinnamon, nutmeg, and cloves.

2 Combine both mixes and stir in vanilla. Add carrots, walnuts, raisins, and pineapple mixing well after each addition. Bake for 45min. or until done. Cool and remove from pan.

Frosting

1 In a blender, puree cottage cheese, yogurt and vanilla. Add cream cheese and blend until creamy. Slowly mix in powdered sugar. Frost cake when cooled.
