A quick and tasty way to use your summer green bean harvest.

Ingredients:

1 1 Tbsp + 1 teaspoon vegetable oil

2 4 cups fresh green beans

3 1 1/2 lb. boneless skinless chicken breast - cut into 1 inch pieces

4 salt and pepper - to taste

5 3 cloves garlic - minced

6 1/4 cup + 2 T low sodium chicken broth

7 1/4 cup + 2 T low sodium soy sauce

8 1/2 tsp red pepper flakes

9 4 1/2 Tbsp honey

10 3 tsp cornstarch

11 ▢1 1/2 Tbsp water

12 ▢2 Tbsp green onions - optional garnish

13 ▢Sesame seeds - optional garnish

Instructions:

1 In a large pan over medium heat, add in 1 teaspoon of vegetable oil. Then add in the green beans and cook for about 5 minutes until the beans are tender. Remove the green beans from the pan and set aside.

2 Next, add in the remaining Tablespoon of vegetable oil to the pan. Season your chicken with salt and pepper and add them into the pan. Cook 3-4 minutes on each side until golden brown and chicken has an internal temperature of 165 degrees F.

3 Next, add the garlic and green beans into the pan with the chicken and cook for 2 minutes until the green beans are warmed through.

4 In a bowl, whisk together the chicken broth, soy sauce, honey, and red pepper flakes. In a separate bowl whisk together the water and cornstarch and set aside.

5 Pour the soy sauce mixture over the chicken and green beans and cook for 1 minute. Next, add in the cornstarch slurry and cook for another minute until the sauce hasthickened.

6 Finally, garnish with green onions and sesame seeds and enjoy.
