Description

These Baked Breaded Chicken Cutlets are moist & tender with a crispy outside. You'll love this healthy and flavorful chicken dish that's so easy to prepare.

Ingredients:

1 2 lb. chicken breast

2 1/2 cup mayonnaise

3 3/4 tsp salt

4 2 tsp Montreal chicken spices

5 2 cloves grated garlic

6 1/4 cup grated Parmesan

7 1 cup plain bread crumbs

Instructions:

1 Cut the chicken into desired sized pieces and pound the thicker pieces just enough to even them up a little.

2 In a large bowl combine 1/2 cup of mayonnaise, 3/4 teaspoons of salt, 2 teaspoons of Montreal chicken spices, and 2 pressed garlic cloves. Then add 2 pounds of chicken breast cutlets and mix to coat chicken,

3 In a separate bowl combine 1 cup of plain breadcrumbs along with 1/4 cup of grated Parmesan cheese.

4 Using tongs dredge the chicken in the breadcrumb mixture and place it on a wire rack in a baking sheet lined with foil.

5 Bake in the oven at 400 degrees Fahrenheit for 15-20 minutes. Then flip the chicken over and bake for an additional six minutes or until golden and cooked through.

6 The internal temperature of the chicken should be at least 165 degrees Fahrenheit.

The first time I tried these they stuck to the rack a bit so I tried them the next time on parchment paper but they were too wet and didn't crisp up. Does anyone have any thoughts on a middle ground? They tasted great and are moist and tender so I will definitely make them again.
