Description

Chicken a la King is a comfort food meal that features tender bites of chicken covered in a thick and creamy sauce with tender vegetables.

Ingredients:

1 1 Tbsp olive oil

2 1-½ pounds chicken breast cut into bite-size pieces

3 1 can mushrooms

4 ½ cup (1 stick) unsalted butter (you can use salted, just adjust the additional salt added - to taste)

5 1 medium green bell pepper, small diced

6 1 small sweet onion, small diced

7 2 cloves garlic, minced

8 ½ cup all-purpose flour

9 Salt and pepper to taste

10 2 cups chicken stock

11 1 cup milk

12 2 cups frozen peas and carrots

Instructions:

1 In a large skillet over medium heat, add olive oil then brown and thoroughly cook the chicken and mushrooms.

2 Remove chicken and mushrooms and set aside.

3 Melt 1/2 cup butter. Add 1 medium green bell pepper, small diced and 1 small sweet onion, small diced, stirring occasionally, until softened, 10 minutes.

4 Add 2 cloves garlic, minced and cook until fragrant, 30 seconds.

5 Add 1/2 cup all-purpose flour, season with salt and pepper to taste, stir to combine so the flour dissolves, and cook for 1 minute.

6 Slowly stream in 2 cups chicken stock while whisking constantly to avoid lumps. Repeat with 1 cup milk.

7 Bring to a simmer and simmer for 5 minutes until thickened, stirring occasionally.

8 Return the chicken and mushrooms, 2 cups frozen peas and carrots and stir to combine.

9 Simmer for an additional 3 minutes until everything is warmed through. Taste and adjust seasoning if needed. Serve immediately with toast or fluffy biscuits!
